Hygiene in the food truck: what you need to do and how we can help you
If you want to operate a food truck legally and without unnecessary stress, you have to follow a set of hygiene rules. It may sound complicated, but it’s actually easy to set up – especially if you have the right partner.

1. Legal requirements for hygiene in mobile catering
Although the laws do not specify the details of the layout of food trucks, the general standards arising from:
- Regulations (EC) No. 852/2004 on food hygiene
- Slovak Act No. 152/1995 Coll. on food
- Decrees No. 533/2007 Coll. (conditions for food establishments)

2. Equipment and layout requirements
(a) Work areas and equipment
- Stainless steel or easy to clean surfaces
- Cooling and freezing boxes with temperature control
- Cooking equipment with corresponding certificates
- Our trailers are equipped with anti-skid flooring, wiring, lighting and work counters that can be added according to HACCP requirements.
b) Washbasins and water
- Separate sinks for hands and dishes
- Hot and cold water (solvable with instantaneous heater)
- Tank for clean drinking water and waste water
- Gastron's trailers have the option of incorporating all the necessary tanks, including electricity and water connections.
(c) Prevention of contamination
- Separate zones for raw materials and ready meals
- Separate plates and containers
- One-way flow of food and waste
- As part of the interior design of the trailer, we can prepare a layout solution to meet these principles.
3. Staff hygiene
- Protective clothing, gloves, headgear
- Regular hand washing and disinfection
- Prohibition of working with food when infected
- We can supply checklists and staff training as part of the package from B4S.
4. Waste management and treatment
- Closed waste containers, separated from the work area
- Daily cleaning of work surfaces and tools
- Possibility to sort waste
- We will supply the sanitation plan and recommended equipment as part of the documentation.
5. Legal registration and permits
- Notification obligation to RÚVZ (without approval)
- Trade licence
- Permission from the city/municipality to stand
- eCash and tax registration
- Health card and professional competence of staff
